Blueberries As A Healthy Snack And Potentialy Life Saving Fruit
As you are most likely aware, the health benefits of a diet rich in fruits and vegetables are huge. One of the super foods that have potential life saving qualities are Blueberries. According to Wikipedia, researchers have shown that blueberry anthocyanins, proanthocyanidins, resveratrol, flavonols, and tannins inhibit mechanisms of cancer cell development and inflammation in vitro. Some blueberry species also contain in their skins significant levels of resveratrol, which is a phytochemical (Phytochemicals are chemical compounds such as beta-carotene that occur naturally in plants. The term is generally used to refer to those chemicals that may affect health. While there is growing evidence to support the health benefits of diets rich in fruits and vegetables, there is only limited evidence to suggest these effects are due to specific phytochemicals.)
So why are we not eating Blueberries by the bushel? Well, for one, they are only in season for a limited time during the year and they can be quite expensive if you are living on a budget or fixed means. So what can we do if we want a delicious fruit that can be a delicious snack? Buy frozen!
I have used frozen Blueberries to add in my non-fat plain Yogurt as well as have added them to smoothies. When I add Blueberries to Yogurt, I keep a cup of blueberries out to thaw at room temperature first. This way, the Blueberries “soften” and are easily eaten along with the Yogurt. When I add them to smoothies however, I throw them into the blender frozen, adding a nice “snap” to the drink!
And speaking of drinks, apparently Blueberry juice is now considered THE fruit juice to drink for optimal health, weight loss and flavor…:) According to a recent article I read: “A Canadian study has found that enhanced blueberry juice helped manage, and even prevent, obesity and diabetes in mice - a finding researchers are hoping will lead to similar results in humans.”
